Ingredients

Main Base
  • 1½ pounds boneless skinless chicken thighs thinly sliced: Thighs stay juicier than breasts and absorb sauce better.
  • 2 cups cooked white or brown rice: Provides a neutral base that soaks up the glaze.
  • 1 tablespoon neutral oil avocado or vegetable: Helps achieve a good sear without burning.
Sauce / Marinade
  • 3 tablespoons gochujang: Delivers authentic Korean chili paste heat and depth.
  • 3 tablespoons soy sauce: Builds savory umami and balances sweetness.
  • 2 tablespoons honey or brown sugar: Creates the sticky caramelized glaze.
  • 2 tablespoons rice vinegar: Adds brightness so the sauce never tastes heavy.
  • 3 garlic cloves minced: Gives aromatic punch that blooms in the hot pan.
  • 1 tablespoon grated fresh ginger: Brings warm fresh spice that cuts through richness.
  • 1 teaspoon toasted sesame oil: Finishes with nutty aroma.
  • 1 tablespoon water: Thins the sauce slightly for even coating.
Toppings / Garnish
  • 1 cup thinly sliced cucumber: Adds cool crunch and freshness.
  • 1 cup shredded carrots: Provides color sweetness, and texture contrast.
  • 2 green onions thinly sliced: Offers mild onion bite and visual pop.
  • 1 tablespoon toasted sesame seeds: Adds nutty crunch and traditional finish.
Optional Add-ins
  • 1 cup steamed broccoli or snap peas: Extra vegetables for volume and nutrition.
  • Soft-boiled or fried egg: Turns the bowl into a more filling meal.

Method

  1. Prep the sauce. Whisk gochujang, soy sauce, honey, rice vinegar, garlic, ginger, sesame oil, and water in a small bowl until smooth. Set aside.
  2. Slice and season the chicken. Cut chicken thighs into thin, bite-sized strips. Pat dry with paper towels so they brown instead of steam.
  3. Sear the chicken. Heat oil in a large skillet over medium-high heat. Add chicken in a single layer. Cook 3–4 minutes without stirring until golden edges form. Flip and cook another 2–3 minutes until nearly cooked through.
  4. Add the sauce. Pour the sauce over the chicken. Stir and cook 2–3 minutes until the sauce thickens, turns glossy, and coats every piece. Look for bubbles and a sticky sheen.
  5. Assemble the bowls. Divide rice among four bowls. Top with sauced chicken, cucumber, carrots, green onions, and sesame seeds. Serve immediately while the chicken is hot and the veggies stay crisp.
