Ingredients

  • 1½ lb ground beef 80/20 fat ratio
  • 6 slices bacon cooked crisp and cooled
  • ½ cup shredded sharp cheddar
  • 1 packet 1 oz ranch seasoning mix
  • 1 tablespoon Worcestershire sauce
  • 4 hamburger buns
  • Optional toppings: extra bacon lettuce, tomato, ranch dressing, pickles

Equipment

  • Large skillet, for both the bacon and the patties (or a grill for the patties)
  • Mixing bowl
  • Paper towels or a cooling rack, for the bacon

Method

  1. Cook the bacon and let it cool completely. Cook the bacon until crisp, then transfer it to a paper-towel-lined plate or rack and let it cool fully before chopping about 10 minutes. Chop it into small pieces once cooled.
  2. Chill the bacon before mixing it in. If you have a few extra minutes, pop the chopped bacon in the fridge or freezer for 5–10 minutes before adding it to the beef. This is the detail that keeps the bacon distinct instead of disappearing into the meat: warm bacon is still rendering fat, and mixing it into raw beef while it’s warm smears that fat and salt through the mixture instead of leaving separate, crispy bits. Cold bacon holds its shape and stays identifiable as actual bacon once the patty is cooked, rather than melting into a uniform greasy texture.
  3. Mix the patty ingredients. In a bowl, gently combine the ground beef, chilled bacon, cheddar, ranch seasoning, and Worcestershire sauce. Mix just until combined overworking the meat here makes for a dense, tough patty once it hits the heat.
  4. Form the patties. Divide the mixture into 4 equal portions and shape into patties slightly wider than your buns, since they’ll shrink a bit as they cook. Press a shallow dimple into the center of each patty with your thumb this helps them cook flat instead of puffing into a dome.
  5. Cook the patties. Heat a skillet over medium-high heat (or preheat a grill to medium-high). Cook the patties for 4–5 minutes per side, until they reach 160°F internally and are well browned on both sides. Pro tip: resist pressing down on the patties with your spatula it squeezes out the juices that are keeping the burger from drying out, on top of the fat already rendering out from the mixed-in bacon.
  6. Toast the buns. While the patties finish cooking, toast the buns cut-side down in a dry pan or under the broiler for about 30 seconds, just until golden.
  7. Assemble and serve. Build your burgers with the patties and whatever toppings you like a drizzle of ranch dressing and a few extra bacon pieces keep the theme going. Serve immediately.
