Pat the chicken dry with paper towels. Season both sides with salt and pepper. Dry surface helps browning.
In a small bowl whisk together honey, lime juice, soy sauce, minced garlic, lime zest, and chili flakes if using. Set aside.
Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer. Cook 5–6 minutes per side until golden and nearly cooked through (internal temperature about 160°F / 71°C). Remove chicken to a plate.
Pour the honey-lime mixture into the same skillet. Bring to a gentle simmer, scraping up any browned bits. Let it bubble 2–3 minutes until it starts to thicken and look glossy. If you want it thicker, stir in the cornstarch slurry and cook 30–60 seconds more.
Return chicken to the skillet. Spoon the glaze over the pieces. Cook another 2–3 minutes, turning once, until the chicken reaches 165°F (74°C) and the sauce coats everything in a shiny layer.
Remove from heat. Let the chicken rest 3 minutes so juices settle. Slice if desired, spoon extra glaze on top, and finish with cilantro, green onion, or sesame seeds. Serve with lime wedges.
