Ingredients

Wet Base
  • 1 cup 240 g pure pumpkin puree: Provides moisture, natural color, and mild earthy flavor without extra fat.
  • ½ cup 120 ml pure maple syrup: Adds deep, caramel-like sweetness that pairs perfectly with pumpkin.
  • ¼ cup 60 ml melted coconut oil or unsalted butter: Keeps the bars soft and prevents dryness.
  • 2 large eggs: Bind the mixture and give structure so the bars hold together.
  • 1 teaspoon pure vanilla extract: Rounds out the flavors and softens the spice notes.
Dry Mix
  • 2 cups 180 g old-fashioned rolled oats: Create the chewy texture and hearty base.
  • ¾ cup 90 g whole wheat flour or all-purpose flour: Helps the bars set without becoming dense.
  • 1 teaspoon baking powder: Gives a light lift so the bars stay tender.
  • 1½ teaspoons pumpkin pie spice or 1 tsp cinnamon + ¼ tsp nutmeg + ¼ tsp ginger: Delivers warm fall flavor in balanced amounts.
  • ½ teaspoon salt: Brightens the sweetness and prevents the bars from tasting flat.
Optional Add-ins
  • ⅓ cup 40 g chopped pecans or walnuts: Adds gentle crunch and nutty depth.
  • ¼ cup 40 g mini chocolate chips or dried cranberries: Introduces small bursts of sweetness or tartness if desired.

Method

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving a slight overhang on two sides for easy removal. Lightly grease the parchment.
  2. In a large bowl, whisk together the pumpkin puree, maple syrup, melted coconut oil (or butter), eggs, and vanilla until smooth and fully combined. The mixture should look glossy and uniform.
  3. Stir in the rolled oats, flour, baking powder, pumpkin pie spice, and salt. Mix until no dry pockets remain. The batter will be thick and sticky. Fold in any optional nuts or chips if using.
  4. Transfer the mixture to the prepared pan. Use a spatula or the back of a spoon to press it evenly into the corners. Smooth the top so the bars bake uniformly.
  5. Bake for 28–32 minutes. The edges should look golden and the center should feel set when gently pressed. A toothpick inserted in the middle should come out with a few moist crumbs, not wet batter.
  6. Let the pan cool on a wire rack for at least 30 minutes. Then lift the bars out using the parchment overhang and cool fully before slicing into 12 squares. Cooling helps them firm up for clean cuts.
