Ingredients

Main Base
  • ½ cup 113 g unsalted butter: Creates the rich foundation and helps the mixture set.
  • 1½ cups 300 g light brown sugar, packed: Adds moisture and caramel depth that pairs with pumpkin.
  • ½ cup 120 ml whole milk: Helps dissolve the sugar and creates the right boiling consistency.
  • ½ cup 120 g pure pumpkin puree (not pie filling): Supplies moisture, color, and authentic pumpkin flavor.
  • 1 teaspoon pure vanilla extract: Rounds out the spices and softens any sharp edges.
Spice & Oat Mix
  • 3 cups 270 g old-fashioned rolled oats: Provide the chewy structure and absorb the warm mixture.
  • 2 teaspoons pumpkin pie spice: Delivers the classic blend of cinnamon ginger, nutmeg, and cloves.
  • ½ teaspoon ground cinnamon: Boosts warmth without overpowering.
  • ¼ teaspoon fine sea salt: Balances sweetness and sharpens the spice notes.
Optional Add-ins
  • ½ cup 85 g mini chocolate chips: Melt slightly into the warm mixture for pockets of sweetness.
  • ⅓ cup 40 g chopped pecans or walnuts: Add gentle crunch if you want texture contrast.

Method

  1. Prep the pans. Line two baking sheets with parchment paper or silicone mats. Set them nearby so you can drop the cookies while the mixture is still warm.
  2. Melt the base. In a medium saucepan over medium heat, combine the butter, brown sugar, and milk. Stir constantly until the butter melts and the mixture begins to bubble, about 3 4 minutes.
  3. Boil briefly. Once it reaches a full rolling boil, set a timer for 1 minute. Keep stirring so the sugar dissolves completely and the mixture thickens slightly. Do not walk away this short boil is what helps the cookies set.
  4. Stir in pumpkin and flavor. Remove the pan from heat. Immediately stir in the pumpkin puree, vanilla, pumpkin pie spice, cinnamon, and salt until smooth and fragrant. The mixture will look glossy and smell like warm fall spices.
  5. Fold in the oats. Add the oats all at once. Stir firmly until every flake is coated and the mixture pulls away from the sides of the pan. It should look thick and sticky. If using chocolate chips or nuts, fold them in now while the mixture is still warm.
  6. Portion the cookies. Working quickly, drop rounded tablespoons of the mixture onto the prepared sheets. Space them about 1 inch apart. Gently press the tops with the back of a spoon if you prefer flatter cookies.
  7. Cool and set. Let the cookies sit at room temperature for 20–30 minutes until firm to the touch. For faster results, place the sheets in the refrigerator for 15 minutes. Once set, they hold their shape and are ready to eat.
